We’re starting a micro-movement

We really like the idea of making, easy tiny shifts toward better health. Micro-movements so small, you might not even notice them except after a while, when you suddenly notice you’re feeling a little healthier. That’s the whole idea behind V2O.

V2O; how it began

A few years ago, we noticed that we were drinking a lot of sparkling water. Because our sister company is a gourmet food shop, we were always combining a little of this with a dab of that, and one day we splashed a little sweet white balsamic into our daily sparkling water and…it was really good. The next time we opened a sparkling water, we did it again. Before long, everyone in our shop was doing it. Our parents adopted the habit. Our kids liked it. And we thought…A-HA!

Our founder Maggie Peterson is, shall we say, a little hyper focused on the intersection between foods that are exceptionally delicious and also full-on healthy. V2O is her creation. 

Months of research and testing went into the V2O that you can just casually sip any time you feel like it.  Things like optimal carbonation percentage for a sparkling water yielded the best mouth-feel for each of V2O’s three yummy flavors. And the ratio of carbonated water to sweet white balsamic is crucial. The stuff is pretty miraculous, actually. 

Because while sweet white balsamic is really delicious, sweet with a little bit of complexity, it’s also SUPER good for you. It’s got all the good stuff that all vinegars have: probiotics, antioxidants. Low glycemic index, and no gluten. Unlike, say, apple cider vinegar, which tastes TERRIBLE, our luscious sweet balsamic is marvelous. 

White balsamic; the key ingredient

A little bit about sweet white balsamic: it’s made essentially the same way as syrupy, rich dark balsamic, AKA Balsamic Vinegar of Modena. True balsamic vinegar is made from a syrup reduction of sweet wine grapes called mosto cotto in Italian. It’s aged for a minimum of 12 years in seven barrels of successively smaller sizes, made from different woods including chestnut, acacia, cherry, oak, mulberry, ash and juniper. 

Sweet white balsamic was created several years ago. Chefs wanted a product with the same characteristics of Balsamic Vinegar of Modena, but without the dark color to preserve the presentation of certain salads and prepared dishes. Created from this curiosity, sweet white balsamic was born.

V2O is a bottled drink made from just two clean ingredients: carbonated water and sweet white balsamic. Our first three flavors are Sicilian Lemon, Cranberry Pear and Honey Ginger. We call V2O ‘intelligent hydration,’ because when you drink it, you get the extra benefits without even trying.

Micro-movement

Back to our micro-movement. Our first step is to enjoy a daily V2O. We like it very cold, from the bottle or over ice. Recent clinical trials using balsamic show health benefits that include reduced risk of cancer and other infectious diseases while slowing the aging process, controlling diabetes, assisting in digestion and more. As a staple of the famed Mediterranean Diet, balsamic vinegar possesses a rich, sweet flavor unlike the sharp taste of a plain white vinegar or the harsh, unpleasant taste of apple cider vinegar.

V2O is a low glycemic index food, which means it helps improve blood glucose regulation and aids in controlling overindulgence. There are no preservatives or artificial flavors or sugar added in V2O. It’s gluten free, vegan and non-GMO.

Voila! The micro-movement has begun. Our next goal is to add more probiotics to our daily intake. Wait! We can also check that off our list because each bottle of yummy friend V2O also has probiotics in it

Sweet white balsamic is a fermented food, so it has naturally occurring probiotics, which are excellent for gut health. And trust us, if your gut’s not happy, neither are you. 

Try to sit still for five minutes every so often. Do nothing but breathe in and out. Look out the window. Sit outside and watch the clouds float in the sky. Take tiny micro-steps toward better health. There’s no better time to start.
